estamos en Bizerte, ya en nuestro barco y puedo de nuevo disfrutar de cocinar a bordo.\nCuando uno va al mercado v\u00e9 much\u00edsimos puestos con hinojo, con zanahorias y con naranjas.\nEstuve dando una vuelta tambi\u00e9n por el mercado de pescado, que es muy variado y me decid\u00ed por un par de aletas de raya, si nunca lo probaron, se los recomiendo es blanco, cartilaginoso, no tiene espinas y tiene una carne muy sabrosa.\nSe puede cocinar de muchas formas como por ejemplo rebozada, a la plancha, frita o guisada y servir acompa\u00f1ada de diversas salsas y guarniciones de verduras, pimientos, tomates, guarnici\u00f3n de avellanas, piment\u00f3n, alcaparras, patatas, ajo y perejil, etc. Yo me decid\u00ed por utilizar como acompa\u00f1amiento hinojos y naranjas aprovechando que estamos en T\u00fanez !.<\/p>\n\n\n\n<p><strong><em>Ingredientes<\/em><\/strong> para 2 personas<\/p>\n\n\n\n<pre class=\"wp-block-verse\">2 aletas de raya (800 gsm)\n2 zanahorias\n1 hinojo\n2 naranjas jugosas\n2 cebollas de verdeo\nAceite de oliva\nManteca\nEmulsi\u00f3n de perejil (perejil, ajo y aceite de oliva procesado) Colocar en un dispensador de salsa.\nCondimentos: Flor de Sal, c\u00farcuma, cardamomo, pimenta de cayena, cilantro, canela, clavo y comino.<\/pre>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"691\" height=\"1024\" src=\"https:\/\/www.mr-beelzebuth.com\/wp-content\/uploads\/2021\/02\/ingredientes-recortada-691x1024.jpg\" alt=\"\" class=\"wp-image-5524\" srcset=\"https:\/\/www.mr-beelzebuth.com\/wp-content\/uploads\/2021\/02\/ingredientes-recortada-691x1024.jpg 691w, https:\/\/www.mr-beelzebuth.com\/wp-content\/uploads\/2021\/02\/ingredientes-recortada-202x300.jpg 202w, https:\/\/www.mr-beelzebuth.com\/wp-content\/uploads\/2021\/02\/ingredientes-recortada-768x1138.jpg 768w, https:\/\/www.mr-beelzebuth.com\/wp-content\/uploads\/2021\/02\/ingredientes-recortada-1036x1536.jpg 1036w, https:\/\/www.mr-beelzebuth.com\/wp-content\/uploads\/2021\/02\/ingredientes-recortada-1382x2048.jpg 1382w, https:\/\/www.mr-beelzebuth.com\/wp-content\/uploads\/2021\/02\/ingredientes-recortada-scaled.jpg 1727w\" sizes=\"auto, (max-width: 691px) 100vw, 691px\" \/><figcaption>Ingredientes<\/figcaption><\/figure>\n\n\n\n<p><strong><em>Preparaci\u00f3n <\/em><\/strong><\/p>\n\n\n\n<p><strong>Cebollas y zanahorias <\/strong>Cortar las dos cebollas de verdeo (el bulbo en l\u00e1minas y el tallo en julianas) Pelar y cortar las zanahorias en 2 y luego en juliana gruesitas (para obtener bastones).  Cocinar el bulbo de la cebolla y las zanahorias en una cacerola a fuego lento con un poco de aceite de oliva, hasta que las cebollas est\u00e9n transparentes. Reservar.<\/p>\n\n\n\n<p><strong> Hinojo <\/strong>Exprimir el zumo de naranja para el hinojo (sin colar y guardar las cascaras para rallar la piel al momento de emplatar). Recortar los tallos y cortar el bulbo en gajos (depende del tama\u00f1o del hinojo en 4 o en 6). Lavar y secar. Colorear los gajos de hinojo ligeramente por ambos lados con aceite de oliva en una cacerola.Cocer lentamente con el zumo de naranja y una pizca de los condimentos hasta que est\u00e9n tiernos. Retirar los gajos de la cacerola y pasar el jugo por un chino. Reservar (el jugo y lo que queda en el chino).<\/p>\n\n\n\n<p><strong>Aletas de Raya <\/strong>Precalentar el horno a 180\u00b0C Colocar en una asadera para horno las aletas de raya con la piel hacia abajo. Agregar un poco de flor de sal, aceite de oliva y la pulpa de las naranjas que quedaron en el chino sobre las aletas. En los espacios libres, en la asadera, junto con la raya, colocar los gajos de hinojo y los tallos de la cebolla de verdeo cortados en juliana finita (rociar con un poco de aceite de oliva). Cocinar la raya 14 minutos a 180 \u00b0C. A mitad de la cocci\u00f3n (7 minutos) Girar las aletas y retirar la piel (se despega muy f\u00e1cilmente). Calentar. Colocar las zanahorias formando un cuadrado, al lado las cebollas de verdeo. Servir las aletas de raya, disponer los gajos de hinojo a un lado y la juliana de verdeo. Ba\u00f1ar el pescado con el jugo de naranja y rallar un poco de cascara de naranjas.
